Opportunity

Under the direction of the Chocolatier & Production Manager, KORC, the Chef I Chocolatier is responsible for the KORC product lines that support the KORC business. Supervise the daily planning and preparations necessary to meet production needs. Manage food and labor cost and assist the Chocolatier & Production Manager, KORC drive new product development. Responsible for the development of KORC, production staff, new product development, production processes and growth, HACCP, equipment sourcing, inventory control, and contributing to decision making affecting the P&L for KORC.

Specific Responsibilities

Planning/Production/New Product Development

  • Participate in the planning process of new products.

  • Keep current with trends in Chocolate industry.

  • All new menu items must be costed out to achieve planned food cost goals.

  • Responsible for maintaining efficient production schedule and goals.

  • Responsible for the maintenance schedule of all production equipment.

  • Plan for future production growth needs through equipment and product research.

Personnel

  • Creates an environment which allows associates to exceed customer expectations.

  • Serves as a role model for proper processes execution and continuous operational improvement.

  • Sets high standards for all associates through conducting monthly all-department meetings to effectively communicate information that affects our business.

  • Will conduct all hourly associate reviews in a fair and timely manner.

  • Coaches and develops associates.

Standards and Procedures

  • Ensure that all Standard Operating Procedures are current, including but not limited to:

  • Recipe manuals, documented in Fish Bowl

  • Batch Formulation Sheets

  • Standard Production Sheets

  • BEO Production Sheets

Cost Control

  • Bid every food product for best price and quality, managing freight expense and inventory timing.

  • Audit transfer sheets for accurate pricing with vendors and inventory documents and submit weekly to business manager’s office for timely processing.

  • Network with the unit chefs for Best Practices, cross-use of products, and reduction of waste.

  • Achieve budgeted food and labor costs monthly and annual plan.

  • Actively participate in month-end inventory.

  • Build relationships with vendors and initiate purchasing agreements with Purchasing Department to reduce food cost.

Quality Control

  • Establish high standards and uphold the culinary food quality statement within the KORC department.

  • Develop and train KORC production associates on proper handling and appearance of chocolates.

  • Stay current with chocolate methodology and drive continuous improvement.

  • Innovate products that exceed customer expectations.

Training and Development

  • Train all KORC associates to achieve the highest standards in culinary arts and techniques.

  • Develop a skilled production workforce capable of adapting to fluctuating production demands.

Sanitation and Safety

  • Develop and maintain HACCP practices and Best Manufacturing Practices.

  • Lead by example in practicing safety and sanitary principles.

  • Comply with Kohler Co. Safety policies for incident/accident reporting.

  • Schedule regular cleaning and inspection of kitchen equipment to ensure safe, sanitary operation and to achieve its maximum operational life. Report and stop usage of all broken/damaged equipment.

Self-Development

  • Utilize Career Management for development planning and goal setting.

  • Keep current with industry trends through national food publications.

  • Pursue professional association membership that further the culinary profession.

Skills/Requirements

  • 7+ years of practical experience in a leadership role in production kitchen management.

  • Culinary degree or equivalent apprenticeship program completed in Chocolate/Confectionary Arts.

  • Ability to coordinate multiple internal transfers of product and cost.

  • Involved in continuing education in the Chocolate/Confectionary Arts.

The salary range for this position is $64,400-$74,050. The specific salary offered to a candidate may be influenced by a variety of factors including the candidate’s experience, their education, and the work location. Available benefits include medical, dental, vision & 401k.
